Courgette Fritters - 8 pieces
1 Courgette, grated and drained in a clean tea towel
1/2 Leek, finely chopped
1 Garlic clove, grated
Pepper and salt
2 tbsp Nutritional yeast
1 tsp Dried chili
55g Flour, I use spelt flour
1/2 tbsp Baking powder
50 ml Plantbased milk, I use almond milk
Mix all the ingredients in a big bowl and leave it for 20 minutes.
Heat a frying pan with a bit of olive oil.
Per fritter, use a spoon full of the dough and bake 3 minutes on each side.
