Michelle's favourite Courgette Fritters

These fritters are a perfect side dish that's both healthy and delicious. They're easy to make, and you can change up the flavour by adding different herbs or spices to match your taste. These fritters are great for an afternoon snack or as a tasty addition to your cheese platter, especially when you have friends over for wine or beer. The best part? They're still good cold the next day, so you can pop them in your lunchbox for a quick, yummy treat.


Courgette Fritters - 8 pieces


1 Courgette, grated and drained in a clean tea towel

1/2 Leek, finely chopped 

1 Garlic clove, grated

Pepper and salt

2 tbsp Nutritional yeast

1 tsp Dried chili

55g Flour, I use spelt flour

1/2 tbsp Baking powder 

50 ml Plantbased milk, I use almond milk


Mix all the ingredients in a big bowl and leave it for 20 minutes.

Heat a frying pan with a bit of olive oil.

Per fritter, use a spoon full of the dough and bake 3 minutes on each side.
