Healthy Pizza

This is a super easy, healthy and delicious snack. It's great for anyone, even if you're not a fan of vegetables – you won't even notice them in this! This healthy pizza is perfect to take with you to the beach or to a picknick. 

Healthy Pizza - as a snack for 6 persons

2 courgettes, grated

1 onion, finely diced 

2 garlic cloves, grated

15 cherry tomatoes, halved

250g white spelt flour

1 tbsp dried rosemary and thyme

If you have some add a good handful of fresh oregano leaves or any other fresh herbs you have in the fridge

Salt & pepper

Preheat the oven 190 degrees with fan.

Mix all the ingredients in a big bowl until you have a nice batter, it takes a little while so keep on stirring.

Use a baking tray with baking paper and spread out the batter in a rectangle shape and more or less thumb thickness in hight.

Sprinkle with a good amount of olive oil.

Bake for 60 minutes, let it cool a bit and cut in small pieces.

Tip: cut the healthy pizza into little squares to serve as finger food
