Banana Chocolate Muffins - Makes 9 muffins
4 ripe bananas
4 eggs
100g almond flour
100g gluten free self raising flour
50g dates
50g chocolate
Pinch of salt
Coconut oil
Step by step instructions
Preheat the oven to 180 degrees. Grease the muffin tins with a bit of coconut oil.
Mix the bananas and dates in the food processor until you have a smooth batter.
Whisk the eggs and salt in another bowl, add the banana date mixture to this bowl and mix well.
Add the two types of flour and mix again. Chop the chocolate in fine chunks and add to the mixture.
Scoop the mixture in the muffin tins and bake for 25 minutes.
